14-Day Meal Kit
The U of M Extension RSDP, along with colleagues in Family Development, created a 14-Day Meal Kit for use by rural and small town grocery stores in this time of need (http://z.umn.edu/14DayRuralGroceryKit). The kit was created with food items that are available, affordable, easy to prepare (in case someone is ill), and have sufficient caloric content. The kits have been tested and cost approximately $120-$150 and weigh 62 lb. Our recommendation is to package the kit in three 20-lb. boxes. While this is a simple tool, it is resonating with communities and people around the state. Refer people to community groups or churches to coordinate the purchasing of kits that can be stored in their communities or at the county food shelf.
